Celebrated Chef, Ken Hom, takes advantage of these vibrant flavours in his recipe for spicy Vegan friendly Sichuan Dan Dan Noodles.<\/p>\n<p>Serves four<\/p>\n<h4>Ingredients<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-14569 alignright\" src=\"http:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2019\/02\/LKK-Ken-dandan.jpg\" alt=\"Lee Kum Kee Dan Dan noodles\" width=\"370\" height=\"253\" srcset=\"https:\/\/testing22.mostlyfood.co.uk\/wp-content\/uploads\/2019\/02\/LKK-Ken-dandan.jpg 915w, https:\/\/testing22.mostlyfood.co.uk\/wp-content\/uploads\/2019\/02\/LKK-Ken-dandan-300x205.jpg 300w, https:\/\/testing22.mostlyfood.co.uk\/wp-content\/uploads\/2019\/02\/LKK-Ken-dandan-768x525.jpg 768w, https:\/\/testing22.mostlyfood.co.uk\/wp-content\/uploads\/2019\/02\/LKK-Ken-dandan-150x102.jpg 150w\" sizes=\"auto, (max-width: 370px) 100vw, 370px\" \/>225g (8oz) whole wheat noodles<\/p>\n<p>110g courgette, finely chopped<\/p>\n<p>2 tbsp Lee Kum Kee Chilli Garlic Sauce<\/p>\n<p>1 tbsp Lee Kum Kee Premium Dark Soy Sauce<\/p>\n<p>2 tsp Lee Kum Kee Chiu Chow Chilli Oil<\/p>\n<p>2 tbsp Shaoxing rice wine or dry sherry<\/p>\n<p>1 tbsp groundnut or vegetable oil<\/p>\n<p>1 tbsp peanut butter<\/p>\n<p>1 tbsp sugar<\/p>\n<p>450ml (16 fl oz) vegetarian stock<\/p>\n<p>1 tbsp garlic, finely chopped<\/p>\n<p>2 tsp fresh ginger, finely chopped<\/p>\n<h4>Method<\/h4>\n<p>1 Heat a wok or large frying pan over high heat and add the oil. Add the courgette, garlic, ginger and stir-fry for 1 minute. Add the rest of the ingredients. Reduce the heat and simmer for 3 minutes over low heat.<\/p>\n<p>2 Cook the noodles in a large pot of boiling water according to the pack instructions. Drain them well in a colander. Divide the noodles into individual bowls and ladle the sauce over them.
