<\/p>\n
1\/2 pound 85% lean ground beef or turkey![](\"https:\/\/www.mostlyfood.co.uk\/Recipes\/mexican_taco_stew.jpg\")
\n1 medium onion, chopped
\n2 garlic cloves, finely chopped
\n2 tablespoons taco seasoning (gluten-free)
\n2 cups low-sodium chicken broth*
\n1 large zucchini or summer squash, cut into small cubes
\n1 (15-ounce) can no-salt-added black beans*
\n1 (14.5-ounce) can diced tomatoes*
\n1 cup frozen corn kernels*
\n1 cup medium salsa*<\/p>\n

Brown meat in a large pot over medium high heat. Drain, remove and set aside.<\/p>\n
In the same pot, saut\u00e9 onion and garlic until onion is translucent.<\/p>\n
Add meat back to pot and sprinkle mixture with taco seasoning to blend.<\/p>\n
Add remaining ingredients and simmer, covered, stirring occasionally, 15 to 20 minutes.<\/p>\n
