{"id":15672,"date":"2017-05-31T10:00:00","date_gmt":"2017-05-31T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15672"},"modified":"2021-11-17T18:42:49","modified_gmt":"2021-11-17T18:42:49","slug":"baked-coconut-lentils","status":"publish","type":"post","link":"https:\/\/testing22.mostlyfood.co.uk\/index.php\/baked-coconut-lentils\/","title":{"rendered":"Baked Coconut Lentils"},"content":{"rendered":"<p>From Whole Foods Market<\/p>\n<p>&nbsp;<\/p>\n<p>Serves 8<\/p>\n<p>An Indian-inspired version of baked beans in which dates, coconut and spices give a rich and hearty flavor that intensifies during baking.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/baked_coconut_lentils.jpg\" width=\"354\" height=\"223\" \/><\/h4>\n<p>1 tablespoon coconut oil<br \/>\n1 yellow onion, chopped<br \/>\n1 teaspoon ground ginger<br \/>\n1\/2 teaspoon turmeric<br \/>\n1 pound lentils (about 2 1\/4 cups)<br \/>\n1 cup pitted dates, chopped<br \/>\n2 teaspoons gluten-free reduced-sodium tamari soy sauce<br \/>\n1\/2 cup shredded coconut<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>In a large saucepan, heat oil over medium heat. Add onion and cook until softened and beginning to brown, about 8 minutes. Stir in ginger and turmeric and cook 1 minute. Add 6 cups water, lentils and dates and bring to a boil. Reduce heat to medium-low and simmer 30 minutes. Preheat oven to 350\u00b0F. Stir in tamari and transfer lentils to a 2-quart baking dish or casserole.
