Fantastically quick and easy homemade mango chutney.<\/p>\n

\nPreparation time: 10 Minutes
\nCooking time: 25 Minutes<\/p>\n

 <\/p>\n

Ingredients<\/h4>\n

1 teaspoon coriander seeds
\n1\/2 teaspoon cumin seeds
\n1\/4 teaspoon dried chilli flakes
\n1 tablespoon sunflower oil
\n1 medium onion, finely chopped<\/p>\n

2 medium mangoes, peeled and cut in small chunks
\n3 tablespoons soft, light brown sugar
\n4 tablespoons white wine vinegar<\/p>\n

Method<\/h4>\n

Using a pestle and mortar, lightly crush the coriander and cumin seeds, then mix with the chilli flakes.<\/p>\n

Put the spices in a heavy-based saucepan and dry-fry until the aromas are released, then remove from the pan.<\/p>\n

Add the oil to the pan and cook the onions over a medium heat for 5 minutes until slightly browned. Add the spices, mango, sugar, and vinegar and 200ml water. Simmer for 20 minutes until thickened. Cool in a bowl and then serve.<\/p>\n
