Get all the family eating sweet potato.<\/p>\n

\nPreparation time: 10 Minutes
\nCooking time: 15 Minutes<\/p>\n
<\/p>\n
<\/h4>\n200g sweet potato
\n150g Greek-style yogurt
\n75g coconut cream
\nWholemeal pittas, toasted and sliced
\n\u00bc x cauliflower, cut into florets<\/p>\n
1 carrot, cut into batons
\n2 celery stalks, cut into batons
\nA few baby corn<\/p>\n
<\/p>\n
Peel the sweet potato and cut into small pieces. Steam in a steamer for approximately 15 minutes. (Or in a microwave following the manufacturer’s guidelines.)<\/p>\n
Puree the potato and stir in the yogurt and coconut cream.<\/p>\n
Serve the dip in a bowl with the pittas and vegetables alongside ready for dipping.<\/p>\n
Cook’s tip: Cut sweet potato into thick finger wedges and toss in a little olive oil and cajun spice. Roast in a hot oven for 25 – 40 minutes and serve in bowls with dips of your choice.<\/p>\n
