It\u2019s also lovely spread on fresh warm scones or spooned into yoghurt at breakfast. You\u2019ll need a jam thermometer for this recipe.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/whole_strawberry_and_05215_16x9.jpg\" width=\"327\" height=\"187\" \/><\/p>\n<h4>Ingredients<\/h4>\n<p>325g\/11\u00bdoz (about 2) very hard pears<br \/>\n500g\/1lb 2oz firm strawberries, hulled<br \/>\n400g\/14oz granulated or caster sugar<br \/>\n1 small lemon, juice only<br \/>\n1 vanilla pod, seeds only<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Peel and grate the pears, minus the core and pips, into a large saucepan. Cover with 500ml\/18fl oz water, bring to the boil and cook for about 15 minutes, or until the pear strands are tender and the water has almost evaporated.<\/p>\n<p>Add the strawberries, and boil for another five minutes, or until the berries are very tender and the liquid has almost evaporated again.<\/p>\n<p>Add the sugar and lemon juice, bring to the boil and cook until the mixture reads 105C\/220F on a sugar thermometer. Stir frequently to check the mixture isn\u2019t sticking on the bottom of the saucepan.<\/p>\n<p>Stir in the vanilla seeds, then leave to cool for 2-3 minutes.
