A delicious moist cake with marmalade, cinnamon and toasted almonds.<\/p>\n

<\/p>\n
<\/h4>\n250g unsalted butter
\n250g caster sugar
\n4 medium size eggs
\n175g self raising flour
\n50g ground almonds
\n1 teaspoon baking powder<\/p>\n
2\/3 jar thin shredded marmalade
\n50g toasted almonds
\n1 teaspoon ground cinnamon
\n150ml double cream, lightly whipped
\nicing sugar to dust<\/p>\n

Preheat the oven to 180\u00b0C, 350\u00b0F, gas mark 4.<\/p>\n
Lightly grease two 20.5cm sandwich tins. Line the bottom of the tins with baking parchment.<\/p>\n
Place the unsalted butter, sugar, eggs, flour, ground almonds and baking powder in a large bowl and beat well for 2 minutes. (This is a lot easier in a food mixer).<\/p>\n
Gently fold in a third of the jar of marmalade, the almonds and the cinnamon.<\/p>\n
Divide the mixture between the sandwich tins. Bake for about 35 minutes until well risen and the top of the cakes ‘spring’ back when lightly pressed.<\/p>\n
Leave to cool in the tins for 2 minutes, then carefully turn out onto a wire rack and leave to completely cool.<\/p>\n
Sandwich the cake together with the remaining marmalade and cream. Dust with the little icing sugar and serve.<\/p>\n
