{"id":16023,"date":"2022-04-22T10:00:00","date_gmt":"2022-04-22T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=16023"},"modified":"2022-03-17T12:33:08","modified_gmt":"2022-03-17T12:33:08","slug":"banana-and-honey-muffins","status":"publish","type":"post","link":"https:\/\/testing22.mostlyfood.co.uk\/index.php\/banana-and-honey-muffins\/","title":{"rendered":"Banana and Honey Muffins"},"content":{"rendered":"<p>From Sainsbury&#8217;s<\/p>\n<p>Moist little muffins with banana and honey.<\/p>\n<p>Serves: 12<br \/>\nPreparation time: 10 Minutes<br \/>\nCooking time: 20 Minutes<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/banana%20honey%20muffins.jpg\" \/><\/h4>\n<p>250g self raising flour, sifted<br \/>\n25g soft dark brown sugar<br \/>\n50g butter, melted<br \/>\n2 small ripe bananas, mashed<br \/>\n2 medium size eggs, beaten<br \/>\n2 tablespoons clear honey plus 2 teaspoons<\/p>\n<p>5 tablespoons milk<br \/>\n3 tablespoons icing sugar, sifted<br \/>\nFew drops of lemon juice<br \/>\n25g dark chocolate, melted (optional)<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Preheat the oven to 200\u00b0C, 400\u00b0F, gas mark 6. Place 12 bun cases in a bun tin.<\/p>\n<p>Place the flour, sugar, butter and bananas in a bowl and mix together.<\/p>\n<p>Whisk together the eggs, 2 tablespoons of the honey and all the milk, then beat into the other ingredients to form a mixture of soft dropping consistency.<\/p>\n<p>Divide the mixture between the cases, filling almost to the top. Bake in the preheated oven for approximately 15 minutes until risen and firm to the touch.<\/p>\n<p>Transfer to a wire rack to cool.<\/p>\n<p>Mix together the remaining honey, icing sugar and lemon juice and place a little on top of each muffin.
