Be sure to use overripe bananas and the right sized tin.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>285g\/10oz plain flour<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/bananabread_85720_16x9.jpg\" \/><br \/>\n1 tsp bicarbonate of soda<br \/>\n\u00bd tsp salt<br \/>\n110g\/4oz butter, plus extra for greasing<br \/>\n225g\/8oz caster sugar<br \/>\n2 free-range eggs<br \/>\n4 ripe bananas, mashed<br \/>\n85ml buttermilk (or normal milk mixed with<br \/>\n1\u00bdtsp lemon juice or vinegar)<br \/>\n1 tsp vanilla extract<\/p>\n<p>&nbsp;<\/p>\n<h3>Method<\/h3>\n<p>Preheat the oven to 180C\/350F\/Gas 4.<\/p>\n<p>Sift the flour, bicarbonate of soda and salt into a large mixing bowl.<\/p>\n<p>In a separate bowl, cream the butter and sugar together until light and fluffy.<\/p>\n<p>Add the eggs, mashed bananas, buttermilk and vanilla extract to the butter and sugar mixture and mix well.
