An enriched bread with the flavour of dried fruit soaked in rum.<\/p>\n

\nPreparation time: 35 Minutes
\nCooking time: 30 Minutes<\/p>\n
<\/p>\n
<\/h4>\n125g mixed fruit
\n50g glace cherries
\n6 tablespoons rum
\n500g pack Premium white bread mix
\n25g butter<\/p>\n
25g caster sugar
\n2 teaspoons mixed spice
\n50g caster sugar
\n350ml warm water<\/p>\n
<\/p>\n
Place the mixed fruit and glace cherries in a bowl and add the rum. Soak overnight. Place the bread mix in a bowl add the butter and rub in.<\/p>\n
Next stir in the caster sugar and mixed spice.<\/p>\n
Add the water and mix for 5 minutes either by hand or in a food mixer to form a dough.<\/p>\n
Place on a floured surface and rest for 5 minutes, then gradually knead and stretch for 2 minutes incorporating the fruit.<\/p>\n
Mould into a ball and stand for 5 more minutes.<\/p>\n
Shape as required into a loaf, rolls or a plait and place into the appropriate greased loaf tin or on a baking sheet.<\/p>\n
Cover with a damp tea towel and leave to rise in a warm place for 30-40 minutes, or until doubled in size.<\/p>\n
Preheat the oven to 230\u00b0C, 450\u00b0F, gas mark 8.<\/p>\n
Bake the loaf for 30 minutes or 20 minutes for the rolls or until golden brown.<\/p>\n
In the meantime combine together the water and sugar and heat gently over a moderate heat until reduced slightly.<\/p>\n
Then use to brush over the surface of the cooked bread. Allow to cool before removing from the tin and serving.<\/p>\n
