Irish Beef Fiery Cheeseburgers <\/strong><\/p>\n

Ingredients<\/strong><\/p>\n

675g minced beef
\n1 mild red chilli, seeded and finely chopped
\n1 garlic clove, crushed
\n2 tbsp double cream
\n1 small onion, grated
\n1 tbsp chopped fresh flat-leaf parsley
\n4 sesame bread rolls or baps, halved
\n2 tomatoes, thinly sliced
\n50g Cheddar, cut into 4 matchbox shapes<\/p>\n

For the lettuce mayonnaise:<\/strong>
\n2 tbsp mayonnaise
\n50g iceberg lettuce, finely shredded
\n25g cocktail gherkins, finely chopped
\n2 tbsp finely chopped onion
\n1 tsp Dijon mustard
\nSea salt and freshly ground black pepper<\/p>\n

Method<\/h4>\n

1. Place the minced beef in a food processor and add the chilli, garlic, onion, double cream and
\nparsley. Season with a half a heaped teaspoon of salt and plenty of pepper, then blitz until the
\nmeat starts to hold together.<\/p>\n

2. Divide the mixture into four and shape around the cubes of Cheddar into 10cm flat discs,
\neither by hand or pressing into a metal pastry cutter. Arrange on a flat plate, then cover loosely
\nwith clingfilm and chill for at least 1 hour to allow the mixture to firm up.<\/p>\n

3. Preheat the grill or a barbecue with medium-hot coals and cook your Fiery Cheeseburgers for about 5
\nminutes on each side for medium.<\/p>\n

4. Meanwhile, place the mayonnaise in a bowl and mix in the lettuce, gherkins, onion and
\nmustard. Season to taste and mix well to combine.<\/p>\n
