LIME IN THE COCONUT COCKTAIL<\/h3>\nThe co-founders and creators of Rock Rose Gin and Holy Grass Vodka, made by the Dunnet Bay Distillery, are celebrating Mother\u2019s Day in style.<\/p>\n
The UK\u2019s most northern mainland distillery is run by Claire Murray and Martin Murray, and they will be serving some deliciously thoughtful cocktails to celebrate their own mothers this Mothering Sunday.<\/p>\n
Both of the cocktails they\u2019ll be serving this Mothering Sunday contain Rock Rose Spring Edition \u2013 one of several seasonal and signature gins in their range. As for Claire, she looks forward to a Holy Grass Vodka this Mothering Sunday<\/p>\n
Claire\u2019s mother Margaret, the Distillery\u2019s Production Supervisor, loves citrus flavours. Claire says: \u201cFor her, we will be serving a Lime in the Coconut cocktail which incorporates Rock Rose Spring Edition, with its deliciously coconutty gorse notes, with the Distillery\u2019s own Coriander & Lime Liquid Garnish\u201d. It\u2019s a holiday in a glass\u2026<\/p>\n
LIME IN THE COCONUT COCKTAIL<\/h3>\nIngredients<\/p>\n
50 ml Rock Rose Spring Edition Gin<\/p>\n
25ml Fresh lime juice<\/p>\n
10-25ml Simple syrup (to taste)<\/p>\n
50ml Coconut water<\/p>\n
A couple of drops of Coriander & Lime Liquid Garnish<\/p>\n
To garnish: a lime wedge and a mint leaf (if available)<\/p>\n
Method<\/p>\n
Fill a cocktail shaker or mixing glass with ice cubes. Add all the liquid ingredients and stir for 20 seconds until chilled. Strain into a frozen martini glass and garnish with the lime and mint.<\/p>\n

Lynne, Martin\u2019s mother, loves elderflower. Martin says: \u201cIt\u2019s too early in the year for fresh elderflowers, of course, but my Mum loves the taste and so for her it has to be an Elderflower & Herb Gin Fizz\u201d. This is a nod to a classic Gin Fizz taken to the next level with elderflower and rosemary notes.<\/p>\n

ELDERFLOWER & HERB GIN FIZZ<\/h3>\nIngredients<\/p>\n
50 ml Rock Rose Spring Edition Gin<\/p>\n
30ml Elderflower Liqueur (such as St. Germain)<\/p>\n
20ml Elderflower cordial<\/p>\n
20ml Fresh lemon juice<\/p>\n
Sprig of fresh rosemary<\/p>\n
Soda water<\/p>\n
To garnish: extra sprig of rosemary – plus elderflowers, when in season.<\/p>\n
Method<\/p>\n
Pour the gin, liqueur, cordial, lemon juice and one sprig or rosemary into a cocktail shake filled with ice cubes and shake. Fill a Collins glass with ice and strain the cocktail into the glass. Top with soda water.<\/p>\n
Garnish with a sprig of rosemary and, when in season, some fresh elderflowers.<\/p>\n
Tip:<\/p>\n
Think ahead during elderflower season: freeze mini-sprigs of rosemary with fresh elderflowers in ice cubes or ice balls so that you have attractive ice garnishes at any time of year.<\/p>\n
As a mother herself, Claire Murray will be taking a break from helping to run the business whilst home-schooling 3 children. She\u2019ll be dropping a strong hint that Martin should pour her a Holy Grass Vodka Coffee Edition Salted Caramel Martini \u2013 not an easy cocktail name to ask for after the first of these so we\u2019ll just call it a Salted Caramel Martini. This is an elegant twist on an espresso Martini\u2026<\/p>\n

SALTED CARAMEL MARTINI<\/h3>\nIngredients<\/p>\n
50ml Coffee Holy Grass Vodka<\/p>\n
20 ml Caramel syrup (or to taste)<\/p>\n
25ml Frangelico Liqueur<\/p>\n
10ml Simple syrup (or to taste)<\/p>\n
Sea salt<\/p>\n
To garnish: coffee beans and extra salt for the rim, if you wish<\/p>\n
Method<\/p>\n
Fill a cocktail shaker with ice and add all the liquids plus a pinch of sea salt. Shake well and strain into a chilled Martini glass (first frost the rim with salt if you wish \u2013 optional). Garnish with three coffee beans. Relax and enjoy\u2026<\/p>\n
