‘Butterstick’ is the variety used in this lovely vegetarian recipe below devised for Burpee by the chef Valerie Hamelin.<\/p>\n
Using a vegetable peeler, ribbons are created for this fresh, raw and simple salad, it is so tasty! Topped with crumbled goat\u2019s cheese, mixed seeds & dried fruits.<\/p>\n
Serves 4 people<\/p>\n
Ingredients:
\n3 ‘Butterstick’ courgettes
\n100g Goat\u2019s cheese
\n2 Tbsp. Mixed seeds & dried fruits (cranberries, raisins & dried apricots)\u00a0\u00a0\u00a0 ![\"Burpee](\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2021\/05\/burpee-yellow-courgette-recipe.jpg\")
\n1 Lemon (juiced)
\n2 Tsp. Honey
\n3 Tbsp Virgin olive oil
\n2 Tbsp pine nuts (toasted)
\nSourdough croutons \u2013 a loaf of sourdough bread cut into slices and diced on a tray, with olive oil & Maldon sea salt- Bake until golden brow
\nSalt & pepper for seasoning
\nPea shoots & purple radish salad – garnish
\n1 Tbsp. fresh chive batons<\/p>\n
Method:<\/p>\n
In a bowl, pour the lemon juice, honey and season with salt and pepper. Whisk the olive oil then add the chive batons.<\/p>\n
Using a peeler, make ribbons of the courgettes.<\/p>\n
Tip the ribbons into the dressing and toss the rest of the ingredients (toasted pine nuts, the sourdough croutons and the mixed seeds & dried fruits)<\/p>\n
Serve immediately on a platter and top with crumbled goats cheese<\/p>\n
To serve:<\/p>\n
Garnish with pea shoot cress & purple salad.<\/p>\n
