Almond Galettes

These are crisp almond biscuits.

Ingredients
125g butter or margarine
50g caster sugar
1 medium size egg yolk
50g ground almonds
75g plain flour
125g icing sugar, sifted
1 medium size egg white
50g shredded almonds
Method
Cream the butter or margarine and sugar together, then add the egg yolk and beat well. Add the ground almonds and flour and mix well. Add the ground almonds and flour and mix well. Knead lightly and roll out thinly. Cut into rounds using a 6cm plain cutter and place on a greased baking sheet.
For the topping, mix the icing sugar with the egg white, then add the shredded almonds and stir well. Spoon over the biscuits and bake in a preheated moderate oven 180°C, 350°F, gas mark 4 for 15 to 20 minutes until golden brown. Cool on the baking sheet before serving
