Banana and Honey Muffins

Moist little muffins with banana and honey.

Preparation time: 10 Minutes
Cooking time: 20 Minutes

 

Ingredients

250g self raising flour, sifted
25g soft dark brown sugar
50g butter, melted
2 small ripe bananas, mashed
2 medium size eggs, beaten
2 tablespoons clear honey plus 2 teaspoons

5 tablespoons milk
3 tablespoons icing sugar, sifted
Few drops of lemon juice
25g dark chocolate, melted (optional)

 

Method

Preheat the oven to 200°C, 400°F, gas mark 6. Place 12 bun cases in a bun tin.

Place the flour, sugar, butter and bananas in a bowl and mix together.

Whisk together the eggs, 2 tablespoons of the honey and all the milk, then beat into the other ingredients to form a mixture of soft dropping consistency.

Divide the mixture between the cases, filling almost to the top. Bake in the preheated oven for approximately 15 minutes until risen and firm to the touch.

Transfer to a wire rack to cool.

Mix together the remaining honey, icing sugar and lemon juice and place a little on top of each muffin. Or if you wish, drizzle the chocolate over the muffins before serving.
