A lovely moist banana cake for a special tea time.

Ingredients
125g soft margarine
4 tablespoons clear honey
2 ripe bananas, mashed plus 1 banana mashed with 1 teaspoon lemon juice
2 medium size eggs
125g plain wholemeal flour
2 teaspoons baking powder, sifted
50g curd cheese
2 teaspoons ground almonds
1 teaspoon clear honey
Method
Grease and line two 18cm sandwich tins.
Place the margarine, honey and bananas in a bowl and blend with a fork. Add the eggs, flour and baking powder and beat together thoroughly until smooth.
Turn into the prepared tins and bake in a preheated oven, 180°C, 350°F, gas mark 4, for 20-25 minutes until the cakes are springy to the touch. Cool on a wire rack.
To make the filling, mix the banana and lemon juice with the curd cheese, ground almonds and honey. Use to sandwich the cakes together. This banana cake is best eaten within 48 hours.
