Cooking time: 30 Minutes
Ingredients
125g butter or margarine
50g caster sugar
125g plain flour
50g ground rice
125g butter or margarine
50g caster sugar
2 tablespoons golden syrup
196g can condensed milk
125g plain chocolate
2 tablespoons milk
Method
Preheat the oven to 180°C, 350°F, gas mark 4.
Cream 125g of the butter and 50g of the sugar together until light and fluffy. Add the flour and ground rice and stir until the mixture binds together. Knead until smooth.
Roll out to a square and press evenly into a shallow 20.5cm square tin, prick well. Bake in the oven for 30 minutes. Cool in the tin.
Place the remaining butter and sugar in a pan with the syrup and condensed milk and heat gently, stirring until dissolved. Bring slowly to the boil, then cook, stirring, for 5 to 7 minutes, until golden. Spread over the biscuit mixture and leave to set.
For the topping, place the chocolate and milk in small pan and heat gently until melted. Spread over the biscuits and leave to set. Cut into squares to serve.
