Hearty pumpkin soup
From Sainsbury’s
Spicy pumpkin dish, ideal served as a light lunch or supper.

Cooking time: 50 Minutes
Ingredients
750g pumpkin, diced
1 onion, chopped
50g brown rice
500g carrots, sliced lengthways
1.2 litres boiling vegetable stock
¼ teaspoon ground nutmeg
10cm stick cinnamon, halved
¼ teaspoon ground mixed spice
Freshly ground black pepper
113g frozen peas
1 orange
Crusty bread to serve
Method
Place the pumpkin, onion, rice, carrots and boiling stock in a large pan.
Add the spices, and pepper to taste and simmer for about 45 minutes, until the rice is soft. Add the peas and cook for 5 minutes. Discard the cinnamon stick.
Cut 4 thin slices from the centre of the orange for garnish.
Grate the rest of the rind and squeeze out the juice. Stir in the grated zest and juice into the soup.
Serve in individual soup bowls, garnished with a twisted orange slice.
Serve with crusty bread.
