From Sainsbury’s
An enriched bread with the flavour of dried fruit soaked in rum.
Serves: 8
Preparation time: 35 Minutes
Cooking time: 30 Minutes
Ingredients
125g mixed fruit
50g glace cherries
6 tablespoons rum
500g pack Premium white bread mix
25g butter
25g caster sugar
2 teaspoons mixed spice
50g caster sugar
350ml warm water
Method
Place the mixed fruit and glace cherries in a bowl and add the rum. Soak overnight. Place the bread mix in a bowl add the butter and rub in.
Next stir in the caster sugar and mixed spice.
Add the water and mix for 5 minutes either by hand or in a food mixer to form a dough.
Place on a floured surface and rest for 5 minutes, then gradually knead and stretch for 2 minutes incorporating the fruit.
Mould into a ball and stand for 5 more minutes.
Shape as required into a loaf, rolls or a plait and place into the appropriate greased loaf tin or on a baking sheet.
Cover with a damp tea towel and leave to rise in a warm place for 30-40 minutes, or until doubled in size.
Preheat the oven to 230°C, 450°F, gas mark 8.
Bake the loaf for 30 minutes or 20 minutes for the rolls or until golden brown.
In the meantime combine together the water and sugar and heat gently over a moderate heat until reduced slightly.
Then use to brush over the surface of the cooked bread. Allow to cool before removing from the tin and serving.
