Malted Fruit Loaf

This is a fruity traditional malt loaf, ideal for packed lunches and picnics.

Ingredients
375g self-raising flour
¼ teaspoon salt
50g Extra Light Olive Oil spread
250g sultanas
4 heaped tablespoons malt drink powder
200ml milk
50g soft light brown sugar
2 medium size eggs, beaten
225g mixed dried fruits
1 tablespoon water
1 tablespoon caster sugar
Method
Preheat the oven to 180°C, fan 170°C, gas 4.
Sift the flour and salt into a bowl. Rub in the Extra Light Olive Gold until the mixture resembles breadcrumbs. Stir in the sultanas.
Blend the malt drink with a little of the milk to form a smooth paste.
Gently heat the remaining milk with the brown sugar until the sugar has dissolved. Allow to cool slightly, then add to the flour with the malt mixture and the eggs.
Mix well, then spoon into a greased and base-lined 1kg loaf tin. Bake in the preheated oven for 1 hour. Leave in the tin for 5 minutes, then turn out onto a wire rack to cool.
Place the dried fruits in a saucepan with the water and sugar, heat until the sugar has dissolved. Spoon over the loaf. Cool and serve.
