Sweet pepper flan

The filling of the flan is similar to ratatouille.

Cooking time: 25 Minutes
Ingredients
50g polyunsaturated margarine
125g wholemeal flour
2 tablespoons cold water
2 tablespoons corn oil
1 onion, chopped
2 cloves garlic, peeled and crushed
2 green peppers, de-seeded and sliced
1 red pepper, de-seeded and sliced
1 tablespoon tomato purée
Method
Preheat the oven to 190°C, 375°F, gas mark 5.
Make the pastry by rubbing the margarine into the flour and adding enough cold water to make a firm dough. Roll out into a circle and use to line an 20.5cm flan dish. Bake blind for 20-25 minutes.
Heat the oil in a pan and soften the onions and garlic, without browning. Add the sliced peppers and tomato purée. Cover the pan and simmer for 15 minutes.
Pour into the flan case and serve
